A 18-year veteran of restaurant cooking and cuisine, Chef Auston Minnich has been the Executive Chef at Grand Traverse Resort and Spa since 2021. Chef Minnich joined the Resort after working at Gordon Ramsay Steak at the Paris Las Vegas Hotel & Casino for seven years. Chef Minnich enjoys honoring northern Michigan agriculture and growers in his dishes. Chef Minnich studied culinary at Robert Morris University Illinois.
Chef Bryan Petrick is the Chef de Cuisine at Aerie Restaurant & Lounge on the 16th floor of the Tower at Grand Traverse Resort and Spa. With 18 years of culinary experience, Chef Petrick joined the team at Aerie in 2012 as a cook and quickly progressed due to his culinary creativity and talent. Petrick is a 2012 graduate of the Culinary Arts program at The Art Institute of Michigan in Novi.
Everything is sweet with Chef Lisa Clark! Chef Lisa attended the Great Lakes Culinary Institute at Northwestern Michigan College and spent two years working in downtown Traverse City where she learned and absorbed the art of dessert. She joined the team at the Resort in 2014 and worked her way up to Executive Pastry Chef. She is always looking for new ways to make something sweet and is taking a sugar art class.
